Christmas Morning Breakfast: Crock Pot Hash Brown and Sausage Casserole

Ever since I moved out on my own it has been a tradition to spend Christmas Eve at my parents house. We always wake up early Christmas morning and open presents, then have a big family breakfast. 

This year I wanted to make a nice dish to go with our bacon, eggs, toast and fruit. So I decided to make a new favourite of ours: Crock Pot Hash Brown and Sausage Casserole.

I discovered this recipe several weeks ago on Pinterest and made it for dinner one night. The husband and I both loved it and thought that it would be great for breakfast as well. The fact that it is done in a crock pot meant that there would be plenty to go around and perhaps even leftovers. This also made for quick and easy preparation. 

To save time in the morning I cooked it the night before (Christmas eve) then just re-heated it in the morning before serving. 

Well I am happy to report that it was a hit with me family. Some of them even had second helpings. 

I've never shared a recipe on my blog before, but I thought it would be a nice addition from time to time.

And adapted it to suit my family. 

Ingredients:

1 Bag of Frozen Hash Browns

1/2 White Onion Chopped

1 Bag of Shredded Cheddar Cheese

5 Smoked Cheese Filled Sausages

1 Can of Cream of Chicken Soup

Directions:

Dump all ingredients into a lightly greased crock pot. Cook on high for 2 1/2 to 3 hours.

Sounds easy right? And its tasty as well. If you check out the original recipe you will notice that I omitted the green onion and salt. But that was just a personal preference. I'm sure there are many other wonderful ingredients that can be added to suit different tastes. 

Now I'd like to know what you think about me posting the occasional recipe? I'm no chef or baker by any means, so they will generally be simple favourites that I intend to share. I'd love to hear your thoughts and/or suggestions in the comments below.

Our first (and only) full day on Prince Edward Island was dedicated to all things L.M. Montgomery. I was like a kid in a candy shop the whole day. Wide eyed and just trying to take as much in as I possibly could.

The first stop of the day was at the birthplace of one of Canada's most beloved authors: Lucy Maud Montgomery.

Located in the Cavendish region of Prince Edward Island, this house has been turned into a small museum. It is open to visitors from mid-May until Thanksgiving.

Visitors are given the background on the house and her early days living there, then are free to wander around the rooms which are set up as it would have been during that time period.

This museum is a must see for fans of the author. They also sell many of her books there including her published journals.

Next on our tour was The Anne of Green Gables Museum, located at Park Corner PEI. This was the home of L.M. Montgomery's Uncle John and Aunt Annie Campbell.

 This museum features the house set in period style with a very large gift shop, a walking trail, barn, gardens and Matthew's carriage rides.

Inside visitors can see the very room in which Lucy Maud married "Ewan" Macdonald in 1911. The cabinet in the picture above was the inspiration for the part in Anne of Green Gables, where she talks to the little girl in the glass.

My favourite part of this stop was the beautiful grounds and the famous Lake of Shining Waters!
Unfortunately we weren't able to go on Matthew's carriage ride as we were pressed for time.

ML's Adventures in... Crocheting Pt. 3

ML’s Adventures in.. is a new segment I am introducing to my blog. It will feature different things that I intend to learn and try. Examples may include: crafts, recipes etc.

 

Unfortunately my first attempt at learning how to crochet didn’t go as planned. But fortunately I was able to find a great video on youtube to help me learn how to make a chain and the basic stitches.

Next up in my TBR pile is 8 Different Crochet Stitches from All Free Crochet.

This eBook claims to have patterns included, so I was eager to start. Crossing my fingers that this book will be more helpful. 

The patterns in this book include tutorials on: Tunisian crochet, vertical crocodile stitch, picot stitch, crazy shell stitch, raspberry crochet stitch, hairpin lace, broomstick lace and single colour crochet brioche stitch.  

After reading through much of this book I came to realize that not only is it geared towards people who are familiar with basic crochet stitches, but crochet terms as well. It also requires different types of hooks and supplies that I do not own. 

Another strike against my plan to learn to crochet. But I’m not going to give up just yet! I have two more books to try out and a number of youtube videos I hope to watch. I hope to return to 8 Different Crochet Stitches, in the future, as it seems to be a decent guide. 

Here’s to hoping that I have better luck with my next attempt.
